Avocado Hummus Sandwich






Ingredients

  • ½ cup canned white beans
  • ¼ avocado
  • 2 tsp. lemon juice
  • Salt and pepper
  • 2 slices whole-grain bread
  • 2 slices tomato
  • ¼ cup baby spinach

Direction
Mash beans with a fork or potato masher until smooth.
Mash in avocado and lemon juice. Season with salt and pepper. Make sandwich with avocado spread, tomato slices and spinach.
