Banana Split Banana Bread


Ingredients

2 ripe medium bananas, mashed
2 large eggs
1 3/4 C all purpose flour
1 1/2 C sugar
1/2 C vegetable oil
1/4 C buttermilk
1 tsp baking soda
1 tsp vanilla
1/2 tsp salt
1/3 C maraschino cherries, chopped
1/2 C fresh pineapple, finely chopped
1/2 C semisweet chocolate chips


Directions
  • Preheat oven to 325 degrees. Butter a 9x5x3-inch metal loaf pan and line with parchment paper. 
  • Whisk bananas and eggs in a large bowl to blend. Add flour, sugar, vegetable oil, butter milk, baking soda, vanilla and salt; stir to blend well. Fold in cherries, pineapple and chocolate chips. 
  • Transfer batter to prepared pan. Bake bread until top is golden brown and splits slightly and tester inserted into centre comes out clean, about 1hr and 20 mins. 
  • Cool in pan on rack 20 mins. Turn bread out onto rack and cool slightly. Serve warm or at room temperature.
