Ingredients:
- 1tbs Milk
- 1/3 Cup Caster Sugar
- 2 Eggs
- 185g Unsalted butter, chilled, cut into small pieces
- 1 3/4 cups Plain flour
- 1/2 cup Self-raising flour
- 4-8 Apples
- 45g Unsalted butter
- 1 Juice of lemon
- 1-2 tsp Ground cinnamon
- 1/2 cup Caster sugar
Method:
- Sift both flours in a bowl and add a pinch of salt. Add butter and start to rub with your fingers. Continue until it looks like fine breadcrumbs. Once it does, add the sugar and mix. Beat one egg with chilled water then add to the mixture. Start to bring the dough together and form into a smooth ball. Divide the dough into two peices cutting one piece slightly bigger than the other. Wrap in glad wrap and put in fridge for 30 minutes.
- Preheat the oven to 180 degrees. For the filling, peel and core the apples and cut each into peices (the smaller the better). Put them into a plate and drizzle lemon juice over it to stop it from discolouring. Place the butter and sugar in a large frying pan over medium heat. when butter has melted add the apples and cinnamon then stir. Stir occasionally until its cooked (when its soft). Tip: to make the apples look and taste better and cook quicker cover the pan with its lid. Set aside to cool.
- Roll out the larger pastry ball on a floured surface. Then put in a metal pie dish and cover the sides with it too. Then cut the over hangings and make it straight. Pour the filling into the pastry. Then roll out the other pastry ball and cut them in straight lines (1cm width and height is how long the pie dish is). Put them on the base dish line by line. you would probably have extras and with these you can make little balls and put them on top of the pie too. Then beat 1 egg with milk or water and brush some on the pie.
