Ingredients:
- 1 3/4 cup Gluten Free Self Raising Flour
- 1/2 cup Corn Flour
- 1 1/4 tsp Xanthun Gum
- 1/2 tsp Salt
- 1 tsp Baking powder
- 1/2 tsp Nutmeg
- 1/2 tsp Cinnamon
- 3/4 cup White sugar
- 1/3 cup Oil - Vegetable or Canola or Rice Bran
- 1 Egg
- 1 cup Coconut Milk
- 1/4 cup Unsweetened apple sauce
- 1/4 tsp Cinnamon
- 1/4 cup Castor Sugar
Method:
- Preheat oven to 180 degrees
- Combine all the dry ingredients in a bowl Mix together til just combined. make a well in the centre
- Add all the wet in the centre of the dry and mix thoroughly until the ingredients are a 'dough-like' consistency.
- Place mixture into a piping bag and pipe into a well greased patty pan or muffin tin (with liners). This will give you a smooth finish. If you don't have a piping bag you can use a couple of teaspoons to spoon the mixture in, it just gives a more 'rustic' finish.
- Bake for 20 minutes or until golden brown.
- Remove from the oven and dip into the melted butter or nutelex if you want to remain dairy free, then dip into the cinnamon sugar mix. Place on a wire rack to cool for 5 mintues and then enjoy!
