Fruit platter with passionfruit yoghurt



Ingredients

500g ctn Greek-style yoghurt
2 passionfruit, halved
2 tbs pure icing sugar, sifted
4 just-ripe white peaches or nectarines, stoned, cut into wedges
500g strawberries, washed
250g cherries, washed
250g fresh lychees, peeled
1/2 small seedless watermelon, peeled, thinly sliced
1/2 ripe pineapple, peeled, thinly sliced

Methods

1. Make the passionfruit yoghurt
  • Combine the yoghurt, passionfruit pulp and icing sugar in a medium bowl and whisk until well combined. Cover with plastic wrap and refrigerate to chill.
2. Arrange & serve
  • Arrange the peaches, strawberries, cherries, lychees, watermelon and pineapple on a serving platter. Serve with the passionfruit yoghurt.
