Ingredients
6 garlic finely minced
1/3 cup cilantro finely chopped
1/3 cup mint finely chopped
1 tablespoon shrimp paste
3 tablespoons fish sauce
Juice of 1/2 large lime (~2 tablespoons)
1/2 teaspoon sugar
3/4 teaspoon ground red chili peppers
Method
- In a large mixing bowl, place the shredded green mangoes, garlic, cilantro and mint, tossing lightly to mix evenly.
- In a small pan, dry heat the shrimp paste on high heat for about 1 to 2 minutes until slightly smoky and pungent. Remove from heat; cool for a couple of minutes, then add to the mango salad.
- Add the fish sauce, lime juice, sugar and ground red chili peppers to the mango salad. Toss everything together until thoroughly mixed. Serve immediately with sticky rice.
