Ingredients
2 large mangoes, peeled, seed removed and sliced (reserve juices)
400g can mixed fruit cocktail, drained
2 tbs rum
1 tsp ground cinnamon
1 tsp ground nutmeg
1 egg, beaten
1 tsp vanilla essence
1 cup (125g) plain flour
1 tsp baking powder
Directions
- Combine mango slices, juice, fruit cocktail, rum and spices in a medium saucepan. Stir over low heat for 10 minutes or until hot. Remove from heat; cool.
- Preheat oven to 150 degrees C. Grease and flour a 20x10 cm loaf tin.
- Combine fruit mixture with egg and vanilla in a large bowl. Stir in the sifted flour and baking powder. Pour into prepared pan.
- Bake for 55 to 60 minutes, or until a wooden skewer inserted into the centre of the cake comes out clean. Cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
