Ingredients
8 ozs tortellini1 cup scallions (thinly sliced)
1 red bell pepper
1 yellow bell pepper (green/)
6 ozs cherry tomatoes
2 ozs feta cheese
3 tbsps olive oil
1/2 lemon
salt
pepper
- Boil the tortellini according to the instructions on the package. Drain them and rinse with cool water.
- In a bowl put the sliced scallions along with the sliced peppers and the cherry tomatoes cut in half if small, or in quarters if they are bigger. Add the olive oil and lemon juice and mix. After that add the tortellini, season with salt and pepper, mix again, sprinkle some feta cheese on top and serve. Enjoy!
