Vitality Salad




Ingredients:

  • 1 large Carrot grated
  • 2 cups shredded purple cabbage
  • half Wombok shredded
  • 1 medium raw beetroot grated
  • half cup slivered toasted Almonds or pepitas, sunflower seeds & pine nuts
  • half cup grated pecorino cheese

Method:

  • Toss above ingredients in a large bowl and drizzle dressing over.
  • Dressing Half cup extra virgin olive oil 2 tbspns balsamic vinegar 1-2 tbspns honey 1-2 tbspns sweet chilli sauce Place the above in a small jar & shake well.
