Ingredients:
- 1 1/4 cup wholemeal flour
- 3/4 cup sugar (optional - I add 1/2-1 tsp vanilla instead)
- 1/4 cup All-Bran Toppers
- 1 1/2 tsp cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 eggs beaten, softly
- 1 cup mashed (and cooled) pumpkin
- 2/3 cup plain Greek yogurt
- 1/4 cup olive or canola oil
- 3/4 cup blueberries
Method:
- In a large bowl, combine the 1st 7 ingredients.
- In another bowl, combine the rest of the ingredients and stir into dry ingredients until JUST moistened (do not over stir)
- Grease 2 muffin trays (or use paper liners)
- Bake at 400F (200C) for 15-20 minutes or until a toothpick comes out clean.
- Cool for 5 mins. in pan, then turn onto a wire rack.
