All Blue Pumpkin Muffins


Ingredients:

  • 1 1/4 cup wholemeal flour
  • 3/4 cup sugar (optional - I add 1/2-1 tsp vanilla instead)
  • 1/4 cup All-Bran Toppers
  • 1 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs beaten, softly
  • 1 cup mashed (and cooled) pumpkin
  • 2/3 cup plain Greek yogurt
  • 1/4 cup olive or canola oil
  • 3/4 cup blueberries

Method:

  • In a large bowl, combine the 1st 7 ingredients.
  • In another bowl, combine the rest of the ingredients and stir into dry ingredients until JUST moistened (do not over stir)
  • Grease 2 muffin trays (or use paper liners)
  • Bake at 400F (200C) for 15-20 minutes or until a toothpick comes out clean.
  • Cool for 5 mins. in pan, then turn onto a wire rack.
