BANANA GINGERBREAD WITH MACADAMIA NUTS


Ingredients:

  • 125g butter
  • 1 teaspoon vanilla essence
  • 3/4 cup castor sugar
  • 3 banana's
  • 3/4 cup plain-flour
  • 3/4 cup self-raising-flour
  • 1/2 teaspoon bi-carbonate of soda
  • 2 teaspoons ground ginger
  • 1 cup macadamia nuts

Method:

  • Prepare bar pan with baking paper.
  • Cream butter, essence and sugar until light and fluffy.
  • Add eggs one at a time, beat until combined.
  • Stir in half mashed banana with half the sifted flour, then remaining dry ingedients with remaining banana.
  • Spread mixture evenly into prepared pan.
  • Press macadamia nuts into top of cake.
