Butter Lettuce with Pesto Dressing




Ingredients

8 leaves butter lettuce, rinsed and thoroughly drained
1 cup plain Lassi (substitute with plain yogurt)
3 cloves garlic
1/2 cup (tightly packed) cilantro leaves & sprigs
1/2 cup (tightly packed) basil leaves
1/4 teaspoon salt + for sprinkling on lettuce

Method

  • Using a food processor or blender, mix the Lassi, garlic, cilantro, basil and salt, pulsing until smooth.
  • Arrange the butter lettuce on a serving plate. Drizzle the dressing over the lettuce. Sprinkle very lightly with salt. Serve immediately.
