Corn Salad


Ingredients

10 ozs corn kernels (each frozen, thawed and patted dry)
1 red bell pepper (medium, ribs and seeds removed, finely chopped)
1 jalapeno chile (small, ribs and seeds removed for less heat, if desired, finely chopped)
1/4 tsp ground coriander
1/3 cup vinaigrette (Lemon)
coarse salt
ground pepper

Method
  • In a medium bowl, toss together corn, bell pepper, jalapeno, coriander, and vinaigrette. Season with salt and pepper.
