Gingered Mascarpone Shortcake




Ingredients

250g mascarpone
¼ cup thick cream
100g glacé ginger, finely chopped
2 tablespoons sugar
2 tablespoons brandy
1 x 200g flan base
2 kiwi fruits, peeled & sliced
1 punnet strawberries
1 punnet raspberries

Directions
  1. Beat together mascarpone and cream in a bowl. Fold in ginger, sugar and brandy.
  2. Spoon onto flan base, spreading evenly. Arrange fruit of choice on top.
  3. Keep covered in the refrigerator until required. Dust with icing sugar before serving, if liked.
