Lychee Mozzarella Salad





Ingredients

8 lychee, pitted and chopped into tiny bits
16 bite sized pieces fresh buffalo mozzarella
1/3 cup cilantro
1/3 cup basil leaves
2 to 3 tablespoons lime juice
1/3 cup olive oil
½ teaspoon sea salt
Freshly ground black pepper

Method

  • Arrange the lychee bits and mozzarella pieces on a serving platter.
  • Place all the other ingredients in a food processor and pulse until smooth. Drizzle over the mozzarella and lychee. Serve immediately.
