Mango-Pomegranate Gelatin Dessert
















Ingredients:

1-1/2 cups boiling water
2 pkg. (3 oz. each) JELL-O Lemon Flavor Gelatin
1-1/2 cups cold water
1 Tbsp. each lemon zest and fresh lemon juice
1 mango, peeled, chopped
1/2 cup pomegranate seeds
2/3 cup thawed COOL WHIP Whipped Topping


Procedure:

  •  Add cold water, zest and juice; stir until well blended. Refrigerate 1 hour or until thickened.
  • STIR in mangos and pomegranate seeds. Pour into 9x5-inch loaf pan sprayed with cooking spray.
  • REFRIGERATE 4 hours or until firm.UNMOLD onto serving plate. Serve topped with COOL WHIP.
