Potato and Bacon Salad

  

 Ingredients:

  • 6-8 large potatoes
  • 4 rashers bacon
  • 1 onion
  • 1/3 cup mayo
  • 4 eggs
  • salt and pepper to taste

Method:

  • Peel and cut potatoes into bitesized chunks. Boil until just soft.
  • Hard boil eggs and slice into thin rounds.
  • Fry bacon and onion until brown.
  • Layer ingredients staring with potato, bacon and onion, mayo and salt and pepper. I like to finish with a layer of bacon and onion, a few egg slices in the centre and a mayo swirl on top.
