Red Skinned Potato Salad


Ingredients

1 kilogram Red potatoes (clean and scrubbed)
450 gram Bacon
6 Eggs
1 Stalk Celery (finely chopped)
1 Onion (finely chopped)
2 cups Mayonnaise
Salt and Pepper to taste

Directions to make Red Skinned Potato Salad

Step 1: Boil water with salt in a large pot
Step 2: Add red potatoes and cook for around 15 minutes until slightly tender
Step 3: Drain and refrigerate
Step 4: Take eggs in a saucepan and cover them with cold water
Step 5: Bring the water to boil and remove the saucepan from the heat
Step 6: Let the eggs be in hot water, covered for around 10 minutes
Step 7: Take them out and peel when cool
Step 8: Chop the eggs
Step 9: Cook bacon in a deep pan until brown
Step 10: Drain and crumble
Step 11: Chop the potatoes with the skin
Step12: In a large bowl, mix potatoes, onion, bacon, eggs and celery
Step 13: Stir in mayonnaise and add salt and pepper to taste
Step 14: Chill for an hour before serving
