Ingredients:
- 1/3 cup Butter
- 1 cup Brown sugar
- 1 tbsp Milk
- 1/2 cup Sultanas
- 1 Egg, beaten
- 1 tsp Vanilla Essence
- 1 1/2 cups Plain flour
- 1/2 tsp Salt
- 1/2 tsp Baking powder
- 1/2 cup Butter, extra (for pastry)
- 1/3 cup (approx.) Ice cold water
Method:
- Preheat oven to 200 degrees C. Lightly grease a 12 hole, 3/4-cup capacity non-stick muffin pan.
- Mix together filling ingredients - butter, brown sugar, milk, sultanas, egg and vanilla. Set aside.
- For the pastry, sift together flour, salt and baking powder. Mix in butter using fingertips. Add water, a little at a time, using just enough to bind mixture into a ball.
- Roll out to 3 - 6mm thick. Cut pastry into circles and press into muffin pan. Place a spoonful of filling mixture into pastry lined pans. Fill to 3/4 full.
- Bake in 200 degrees C oven for 8 minutes, then reduce temperature to 180 degrees C and bake for 20 to 25 mins, until pastry is lightly browned. Allow to cool in pan for a few minutes before turning out onto a wire rack to cool.
